Who doesn’t love cream cheese? It’s the perfect spread for bagels, sandwiches, veggies, crackers, and basically everything else.
Even better, an herby cream cheese!
Here is a dairy-free take that you will LOVE. Unlike the dairy kind, it’s packed with nutrients like potassium, vitamins E and B-6, and folic acid, all without the cholesterol.
You can also use this spread to stir into pasta or anything else you want to make creamy.
The best part is that it’s super simple to make!
1 cup raw cashews
1 tablespoon nutritional yeast
1 tablespoon lemon juice
1/2 teaspoon salt
a handful of your favorite herbs, chopped (I love chives or parsley)
Soak cashews in a bowl with warm water for 1 hour.
Drain and rinse cashews and add to a food processor with all of the ingredients except the herbs. Blend until smooth.
Stir in the chopped herbs and store in an airtight container in the fridge.
