Did you know that chia seeds do this magical thing in liquid? They swell up! Soak them in some creamy plant milk and you have a tapioca pudding replica, but one that's filled with a ton of nutrition.
Chia seeds are an excellent source of omega-3 fatty acids (brain and heart food!), rich in antioxidants, and are packed with fiber, iron, and calcium. These powerful little seeds also help raise "good" HDL cholesterol.
This pudding is the perfect breakfast paired with fruit, nuts, and even a little non-dairy yogurt added on top. It also can be enjoyed as a healthy dessert alternative!
This recipe is vanilla-flavored, but feel free to add some cacao powder and/or nut butter (cacao and peanut butter is an amazing combination, FYI!).
RECIPE
INGREDIENTS
1 cup plant milk
1/4 cup chia seeds
1/2 tsp pure vanilla extract
1 tablespoon maple syrup or agave (more or less to taste)
pinch of salt
INSTRUCTIONS
Whisk all ingredients together in a jar or other container.
Seal with a lid and refrigerate overnight.
Add your favorite toppings in the morning and there you have it!
